Fellow foodies, I feel a huge group, cheese themed picnic coming on and I’m excited…
Picnic hampers at the ready? Got sunscreen, hats, blanket and the appetite to eat your entire body weight in cheese? Here, let me hold your glass of chilled wine whilst you fill your plate again, again and AGAIN!!!
No, seriously, how good does a cheese themed picnic sound right now? We should totally find ourselves an awesome park to throw out the picnic blankets (or enough park benches if sitting on the ground irks you out a little – here and Sydney that would be wise because we have been having so much rain lately!) and just gorge ourselves on cheese whilst toping up that tan…
This is happening…
So for this awesome picnic we need to find an awesome park. It should, of course, have enough open space for our canine cheese-picnic companions to come along (I’ll bring Mace and Khan but we’ll have to make sure Khan is in a reinforced, electrified playpen because, despite being the cuddly bear of a dog at home, he really doesn’t like other dogs… or people for that matter – he’s a strange dog. By the way, if you haven’t met my awesome canine kiddies yet, you can become better aquatinted right here).
And, of course, for those who have kids, we’ll make sure this park has awesome slides, swings, roundabouts and monkey bars to tire them out (because they won’t be too fussed about eating cheese, right?) and then, when the kids have had enough we adults can totally have a go too!
But wait…. Perhaps we shouldn’t have this cheesy picnic at a park? I mean this event is, naturally, happening in the Northern Hemisphere (I mean, hello!, summer!) perhaps we need to be, say, by a lake where we can swim when things get too hot… or maybe even at the beach?
Why don’t we just find a park that has a lake… or is by the beach?
The struggle is real people!
But please, people, focus (I can’t believe I’m rambling so much today. Perhaps I need some coffee? Or wine? No, cheese. Anyone?) the biggest thing we need to worry about right now for this cheese-themed picnic is – duh! – the CHEESE.
What cheese are you bringing? Let me ask you now, in all seriousness, if you could only bring one type of cheese to the cheese-themed picnic (think: you’re on a dessert island and can only have one thing kinda deal) what type of cheese would that be?
Well, I don’t know about you but this may be one of the hardest foodie related questions out there because the choices are too many.
But, right now, I’d have to say I would bring today’s recipe: namely this Greek style feta that has been baked in the oven.
Now, I know the recipe title is “baked cheese” but, for now, I want you to think of this as a warm, gooey, scrumptious, stuff-your-face-til-you-can’t-eat-no-more DIP.
That’s right, this is an unbelievably addictive cheese dip. Better yet, it is an unbelievably quick and, quite astonishingly, easy (just look at the recipe below – only one step in the method! ← recipe goals achieved) dip that can be thrown together in a matter of minutes, followed by 15 to 20 agonising minutes whilst you’re waiting for it to cook.
Just chop up tomatoes, bell pepper, onion and olives, mix it all with crumbled feta, garlic, pepper, salt and oregano; glug a decent helping of olive oil over the top and bake until gooey. And then, pick up your favourite chip, cracker, biscuit, bread and delve in to that gooey goodness.
Bring on the cheesy goodness!
(oh, and disclaimer: if you haven’t already noticed I’m a bit of a cheese fanatic. Cheese Rocks!)
So although a huge group, cheese-themed picnic in a park (that has a lake and is situated within a suitable walking distance from a beach) may not be happening this weekend – although I hope it does some time in the future – you can totally have your own cheese picnic and I can still bring my cheese to it in the form of this recipe – which you are so going to make this awesome weekend.
Well, I think I’m done here (I think I was done after the first paragraph) so until next time my fellow foodies. Happy Cheesy weekend!
