Nope, there is not a steaming bowl of Mac & Cheese, made with Feta cheese and a ridiculously quick and easy Red Pepper Sauce – sitting on the kitchen counter.
No, it is not the epitome of I-don’t-feel-like-cookng-but-I-don’t-want-takeout-either food so just keep walking and don’t look back.

There is something here; it IS a steaming bowl of Feta and Red Pepper Mac & Cheese and it is amazing. Let’s all gather round it with “ooohs” and “aaahs” like it’s a famous painting in a museum.
A world famous painting we can eat!
But before we continue I should apologise for two things:
#1: There is no longer any steaming bowl waiting for your admiration: I’ve already eaten it (and yes, before you ask, it was whilst I was catching up on a Netflix marathon);
#2: There are hardly any leftovers because I keep stuffing my head into the fridge and taking sneaky mouthfuls (read: bowlfuls). I’ve probably eaten enough to feed several people but, you know what: #sorrrybutnotsorry
However, as a silver lining, you can whip this little beauty of a recipe together in a few minutes flat.
#1: It’s Really Quick to Make
3 Ingredients. Need i say more?
How long does it take to cook macaroni? 10 minutes? 12?
Perfect amount of time to catch up on Facebook and other social media affairs. Then peel yourself away for a few more minutes as you strain, stir though the Red Pepper Sauce and Feta and – Boom! – dinner’s ready
Hardly any work – score!
And if, for some utterly strange reason, you don’t have a batch of Thyme to Mango’s 5 Minute Red Pepper Sauce (where have you been?) it is hardly going to make extra hassle for you.
As the name suggests it comes together in 5 minutes or less, taking the time to make and prepare this meal a total of about 20 minutes with over 50% of this time still non-active!
Or, if you’re the real time-efficient, multi-tasking pro, you can make the sauce whilst the macaroni is cooking.

Let’s face it: Mac and Cheese is a food that is just begging for some changes. Apart from penny-pinching students (respect, we’ve all been there✌️) who eats a simple Mac and Cheese (like, JUST MACARONI AND CHEESE)
Not many, right?
No, Mac & Cheese is that blank canvas-like meal that wants you to go nuts with extra toppings.
Personally I couldn’t eat it without small crispy pieces of bacon. Or perhaps some mushrooms? Or, taking this humble food to new heights, how about pancetta and olives or other such things.
Pimped up comfort food.
Yes, this is what is needed in life ?
#4: It’s Healthy(-ish)
Alright, so this isn’t going to win health and fitness awards, or anything like that, but this wins a few little health bonuses when compared to the original Mac & Cheese
The Sauce isn’t a mixture of cheese, milk and butter but rather Red Peppers (counting towards your daily fruit and veggie intake – oh right!) and Olive oil (you know that really healthy oil)
We’re cutting down on our animal fats and, if you choose wholemeal macaroni, you eating pasta that is a little less processed.

Feta and Red Pepper Mac & Cheese
Cook Time: 20 mins || Serves: 4 to 6
Rate this recipe:
- 400g Macaroni
- 2 Cups 5 Minute Red Pepper Sauce
- 150g Feta
- Salt and Pepper to taste
- Cook the Macaroni according to the packet’s instructions. Drain.
- Return the macaroni to a saucepan on the stove along with the Red Pepper Sauce and Feta. Cook on med/high heat for 1 – 2 minutes or until heated through.
