Preheat your oven to 180°C/160°C Fan Forced/350°F. Spread the sweet potato across a lined baking sheet and bake for 25 to 35 minutes or until cooked and lightly golden. Remove and allow to cool completely.
Place all the ingredients (only 1/3 cup of the olive oil at this point) into a food processor and process until smooth, adding more olive oil if needed to reach the desired consistency.
